GI Recipe Ingredients (Serves 1)
4 oz salmon filet [fresh or frozen] [200]
1/2 cup sliced mushrooms [10]
1/2 cup sliced red bell peppers [12]
Juice of 1 lemon
1 cup fresh or frozen green beans [40]
4oz sweet potato, with milk [110]
GI Recipe Cooking Method
1. Place the salmon in a baking dish and top with the mushrooms and peppers.
2. Drizzle lemon juice over.
3. Bake, uncovered, in oven pre-heated to 180 degrees for about 20 minutes.
4. Serve with steamed or microwave green beans and sweet potato.
Recipe Ingredients (Serves 1)
3 oz can tuna packed in water, drained [90]
1 oz shredded low-fat cheese [70]
1 green onion, finely chopped [10]
1/2 cup cooked, canned or frozen, corn [70]
1 slice rye bread [70]
1 cup vegetable juice [like V-8] [50]
PAM cooking spray
GI Recipe Cooking Method
1. Spray non-stick skillet with cooking spray, add the onion and cook
for 2-3 minutes.
2. Add the tuna and corn and heat for 2 minutes.
3. Pile mixture on top of the bread, sprinkle cheese over and broil until
cheese melts.
